Honourable Ways
Everyone knows about selling stolen goods or robbing people in the highway, so let's start with something a bit more reputable and who makes the world a better place. Let's start with killing people!
Hunting Bandits
In medieval times, bandits could be often found in empty roads, preying on helpless travellers. Be it a dirt path or a road through the woods, chances are you will found a lonely robber or two to enact justice upon.
Killing them wields no setbacks whatsoever, and you are free to loot their corpses with impunity. Selling the gear is bound to make a few groschens, easily wielding you a hundred coins per bandit slayin'.
You can also trigger bandit attacks by fast travelling, so crossing hotbeds of bandit activity like dark forests is a great way to find some fools if you don't want to do the looking. Just be warned: sometimes, you'll be faced with more than a couple of highwaymen -- in which case, it is usually better to show the better part of valour and get the hell out of there.
Bounties
If looking for bandits unasked is a bit too open-worldy for you, you can instead go to the always helpful Captain Bernard in Rattay for an official assignment to kill some cowardly bandits. He's the dude that trains you outside the city walls right after you become an squire.
Those bounties take the form a mini side quest and can easily wield a couple of hundred groschen if you're lucky. And if you happen to run into any Cusmans on the way, Bernard will pay you for their ears too -- which leads us to our next point...
Eliminating Cusmans
Killing the fuckers who destroyed your village is not only a satisfying proposition, it's also a lucrative one. By having a dagger on your inventory, you'll be able to cut the ears off Cusmans you kill as a proof of their deadness.
The body parts can then be taken to either Captain Bernard (see above) or Sir Robard (the old guy who talked some sense into you after you arrived in Talmberg injured). So go out there, and get killin'.
Illegal Ways
Of course, if you rather garner wealth by not putting yourself at risk -- like a coward -- you can go about a myriad of illegal ways.
It should be noted that in order to make this truly viable, you need to unlock fences (buyers of stolen goods) by helping Theresa's uncle Peshek, and have a good reputation in cities you visit -- otherwise, the guards will search you every time they see you, meaning you either lose all your stolen items or must bribe the guards to keep them.
Without a doubt, thievery is the most straightforward way to gather money in Kingdom Come: Deliverance -- as long as you can withstand the horrendous lockpick and pickpocket minigames.
Banditry
On a reversal of everything we told you so far, you can go the other way and attack random passersby yourself. Aside from straight up attacking common folk anywhere, you can specifically targets roaming NPC's called wayfarers, which usually have a couple of dozen groschen and a nice kit.
It should be noted that if you are planning to make this a living, it's better to sneak behind folk and choke them to unconsciousness than kill them outright. Besides preserving a life, they may also restock their inventory as the days go by. It is also a great way to knock out lone guards to get their gear.
Burglary
The time-honoured tradition of breaking into places and stealing things was immortalised in Oblivion and Skyrim's Thief Guild missions as something acceptable for gamers to do. Kingdom Come: Deliverance continues that motif, and robbing places can net you some pretty coin if you are not caught.
Remember that the night is not the only good time to practice your Catwoman skills -- during the day, a lot of places are left vacant as their usual occupants go about their duties. Observe, plan, and then act to make the best out of opportunities (you can even sleep on people's beds while they're away working).
